You won’t get any much further from these three. And you should definitely try Akple and fetri detsi if you are a ‘swallow” lover.
We will show you how to prepare it. It is delicious and easy to make.
Preparing your Akple
Ingredients
- 1/2 cup of cassava dough
- 1 cup of corn dough
- Water
- Salt to taste
Method
- Mix together the 2 doughs in a saucepan with a half cup of water to get a smooth creamy mixture, and add a little salt. Get a nice heavy wooden spoon or stick that works well.
- Put the mixture on the stove on medium heat and stir it as it heats, adding another half cup of water all at once and continue stirring until it forms a solid mass (about 10-15 minutes). Do not allow the dough to become lumpy or scorch on the bottom. Turn it as you stir.
- When the mixture becomes fairly solid and no longer “wet” looking, take a calabash (or bowl), wet it thoroughly, and put a spoonful of the dough into the calabash, shaking it vigorously and rolling the dough inside into a circle or oval shape.
- And dish into a glass bowl or earthen bowl
Preparing Fetri Detsi
Ingredients
- 4 chicken breasts, boned and skinless
- 4 ounces of onions, chopped
- 1 teaspoon of salt
- 2 medium tomatoes, peeled
- 2 green chili peppers, seeded gingerroot
- 4 cups of water
- 12 ounces of okra, sliced
- 1⁄4 cup of tomato paste
Directions
- Place chicken and onion in a heavy saucepan or Dutch oven.
- Sprinkle with salt.
- Using the fine blade of a grinder, chop tomato, chili peppers, and ginger.
- Add mixture to chicken.
- Pour in water and bring to boil. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender.
- Add okra.
- Stir in tomato paste. Continue simmering, uncovered, until chicken and okra are tender.
- Place each breast on each individual’s dinner plate or any of the earthen bowls you can find. Divide vegetable and liquid evenly and pour over chicken breast.
Serve your Akple with your fetri detsi and you are ready to dig in.
